Lactic Acid Bacteria, Microbiological and Functional Aspects

Creator: Seppo Salminen, Atte Von Wright, Arthur Ouwehand | 2004-07-23

The first edition of this international bestseller both predicted and encouraged vigorous study of various strains of lactic acid bacteria in order to substantiate much of what was known but never scientifically validated.

Publisher: CRC Press

About this book
While lactic acid producing fermentation has been utilized to improve the storability, palatability, and nutritive value of perishable foods for a very long time, only recently have we begun to understand just why it works. The first edition of this international bestseller both predicted and encouraged vigorous study of various strains of lactic acid bacteria in order to substantiate much of what was known but never scientifically validated. The editors now feel compelled to offer a new edition in order to inform microbiologists, food technologists, nutritionists, clinicians, product development experts, and regulatory experts of what continues to be rapid progress in the field. Lactic Acid Bacteria: Microbiological and Functional Aspects, Third edition brings its readers up to date on this continually expanding branch of study incorporating the latest research and findings from all corners of the world. In keeping with the inclusive multidisciplinary philosophy of the original editions, the editors have recruited several more scientists of distinction -- bringing the total of contributors to 37. The bulk of the text has been completely rewritten with new chapters being added to cover recently evolved topics, such as mathematical modeling, vegetable fermentation, methods for analysis of the gut microbiota, and probiotics for fish. As in the two previous editions, the present volume gives a valuable overview of the present status of this rapidly expanding interdisciplinary area of research. Also, as before, special emphasis has been placed on the health aspects of lactic acid bacteria, although, as can be seen in the table of contents, other relevant applications are covered as well.

About this book
Lactic acid (IUPAC systematic name: 2-hydroxypropanoic acid), also known as milk acid, is a chemical compound that plays a role in several biochemical processes. It was first isolated in 1780 by a Swedish chemist, Carl Wilhelm Scheele, and is a carboxylic acid with a chemical formula of oH6O3. It has a hydroxyl group adjacent to the carboxyl group, making it an alpha hydroxy acid (AHA). In solution, it can lose a proton from the acidic group, producing the lactate ion CH3CH(OH)COO. It is miscible with water or ethanol, and is hygroscopic. Lactic acid is chiral and has two optical isomers. One is known as L-(+)-lactic acid or (S)-lactic acid and the other, its mirror image, is D-()-lactic acid or (R)-lactic acid. L-(+)-Lactic acid is the biologically important isomer.

About this book
In ancient times foods fermented with lactic acid bacteria already constituted an important part of the human diet. From then on, lactic acid bacteria have played an essential role in the preservation of food raw materials and have contributed to the nutritional, organoleptic and health properties of human food products and animal feed. The important function that lactic acid bacteria still have in the production of foods all over the world has resulted in a growing scientific interest in these micro-organisms by academic research groups as well as by industry. During the last 15 years, this research has been stimulated by major internationally coordinated funding efforts that have resulted in a variety of important scientific breakthroughs and have led to new applications. Written by international experts in the field, this issue of Antonie van Leeuwenhoek documents these developments with respect to genetics, metabolism and the application of lactic acid bacteria for industrial and potential medical applications. In this book the first complete genome of a lactic acid bacterium is presented. The book will serve as a reference source and also as an indispensable source of information for further development and exploration of the field.

0 5/5 Dr. Siphu - See all my reviews Verified Purchase(What's this?) This review is from: Lactic Acid 50% Gel Peel - Enhanced with Kojic Acid & Bearberry Extract (Professional Chemical Peel) (Misc.) I normally don't give out reviews. As a Ph.D., I'm very skeptical about any claims made without scientific proof and data to support the claims. However, I decided to try this product based on the reviews I read on Amazon. After two applications, nothing short of amazing. My melasma spots are pretty much gone, and I've been living with them for years. Based on this, I felt compelled to give a review of this product. Pretty amazing product. Best way to describe it: a $1000 dermatologist visit in a $30 box. 0 Help other customers find the most helpful reviews  Was this review helpful to you? , May 26, 2013

Worked wonders on zits and scars!

I decided to come out of the shadows on my amazon account to write a review for this product - that's how amazing it is!I'm in my early 20s and started suffering from breakouts after barely ever having a zit in my teenage years, save for one once in a blue moon. Now, I have patches of pimples around my chin and on my cheeks. I had no idea what to do - I changed my skincare routine, started using natural soaps and toners and moisturizers, as well as a Clarisonic Mia face cleansing brush, with few results. I also began taking fish oil and vitamin supplements, but that did not work either. A few months ago I resigned myself to the idea that my skin just wouldn't be as clear as it used to be, and began resorting to foundation to cover up the breakouts. However, I randomly stumbled upon this product on Amazon one day. I was hesitant due to some of the mixed reviews, but after contemplating for a while and with my skin getting worse, I decided it would be worth a... 5/5 Mia Aurora - See all my reviews Verified Purchase(What's this?) A Great Peel that Gives Results!

My skin had really worsened after all those tanning sessions at the beach. Wrinkles and brown-spots were really evident on one side of my face that made my face look weird and unsymmetrical. I had previously used expensive creams and masks, but to no avail; they showed minimal or no results at all. Then a friend of mine recommended gel peels to me and I did a quick Amazon search on them. They turned up quite a few results but thanks to the overwhelmingly positive reviews on this Perfect-Image product, I went for it and I wasn't disappointed. After only two application (I use this once a week), my skin looked noticeably even-toned, bright and young. I would really recommend this peel to all those who are suffering from hyper-pigmentation.A few notes of advice:> ALWAYS do a patch test on an inconspicuous area of your skin before actually applying the product to your face. Great Size for the Price

I bought this product to use as an acid peel for my face, hands and décolleté area however; this is not the seller's purpose for this product. I have found that it works great with some draw backs. First con, it does not come with any instructions; since this is not the intended purpose of the product you either need to know what you are doing or need to find instructions on the internet or from your doctor. The second drawback is that this product is quite a bit thinner than an acid peel intended for the skin, so the user needs to be careful to avoid applying too much and having the acid run to non-intended areas. Now for my experience: I've had several peels both from a doctor and a spa before attempting to do one myself at home so I knew what to expect, otherwise I may have been a little concerned. I wasn't sure what strength to start with so I first bought a 50% lactic acid and began with a low application time and gradually increased the time with each application... 5/5 Wendy Marr - See all my reviews Verified Purchase(What's this?) I've tried numerous peels (jessners, tca10-30%) glycolic 40, and other brands of lactic in 30%. I've seen results with all of them but none that have targeted my post inflammatory hyper-pigmentation like this one! I applied it and waited the entire 10mins( not recommended for first time users). The next morning after showering, I noticed a thick layer of skin had peeled on my cheeks and t-zone. Slight peeling around neck area. I mean it shed like snake skin. I like the fact that the solution had a thicker consistency than most peels. Really helped with ingrown hair bumps... 0 5/5 otismom - See all my reviews This review is from: Skin Obsession 85% Lactic Acid Antiaging Peel (Health and Beauty) I received this after ordering 15% TCA. After emailing the company, I heard back the same day with an apology & a promise that they would send the correct order to me via priority mail. I had my doubts but low & behold it arrived very shortly with another apology & a free container of moisturizer! Wow..that doesn't happen nowadays! Meanwhile, I got to keep the lactic acid so decided to use it. This was my first time so I was very cautious. I put two layers on some stubborn sunspots which looked semi burnt for a day or two but they peeled & are looking fine. It really did lessen the discoloration of the age spots & I will use it again. Very happy with the product & the company. Would recommend!!:) 0 Help other customers find the most helpful reviews  Was this review helpful to you? , October 10, 2011

My skin type is light & sensitive . I'm Irish French & German with light eyes & dark hair, which means I have some sun damage spots and uneven spots without make-up, which I HATE wearing .. Which is why I like the idea of peels so much.I had previously used the 70/30 peel which I graduated leaving on for 7-8 mins & had ok results. One peel with this strength peel & the results were really good! It evened out my skin discolorations & sun spots . I only let it on for 5 mins & it did redden & burn my skin a little. Next time I think 3 mins should be sufficient 0 Help other customers find the most helpful reviews  Was this review helpful to you? , November 21, 2012

Excellent no-down time peel to keep skin clear and ...

First, I want to say I've always received exceptional customer service from Skin Obsession. Products arrive fast and packaged well. Rare mistakes are always corrected as repeat business seems to be very important to the sellers. I buy three products regularly. One of them is the 85 percent Lactic Acid peel. The Lactic acid is not a peel in which one will see a lot of peeling. In fact, if used right, you should not experience what we call down time. You really shouldn't see much more than some flaking, if even that. It will depend, of course, on how much exfoliation your already do. No overt peeling or flaking doesn't mean it is not working. The Lactic acid peel is primary for 1) keeping skin tone even -- getting rid of discoloration from anything, acne, sun damage and 2) to keep your skin decongested, which lets it absorb other products much better. Lactic acid works over time, though you don't see it. Don't be afraid! Try this peel

I must admit to being really afraid the first time I tried this peel. BACK STORY: I gave myself an "accidental" face peel as a teenager when I used my moms Retin-A and then went in the sun...I peeled for weeks after that! But since I'm in my early 30s and am now noticing fine lines and wrinkles as well as some sun spots (I love in S. Florida and the sun has done a number on me) I needed to try something, wrinkle creams just don't cut it. Also, I am fair with freckles and want to try to lighten them a bit as well. So, I got the nerve to try this peel and it was a piece of cake! I used a cotton ball and applied a small amount in an even layer all over. I was careful not to get too close to my eyes and lips. The first thing I noticed was how my little patches of acne started to get really red and I my skin was tingly. The directions tell you that if it's your first time using not to leave it on longer than a couple minutes. So when the time was up, I rinsed using plain water and on... 5/5 vandagal - See all my reviews Verified Purchase(What's this?)
