Lactic Acid Bacteria: Microbiological and Functional Aspects, Third edition brings its readers up to date on this continually expanding branch of study incorporating the latest research and findings from all corners of the world. In keeping with the inclusive multidisciplinary philosophy of the original editions, the editors have recruited several more scientists of distinction -- bringing the total of contributors to 37. The bulk of the text has been completely rewritten with new chapters being added to cover recently evolved topics, such as mathematical modeling, vegetable fermentation, methods for analysis of the gut microbiota, and probiotics for fish. As in the two previous editions, the present volume gives a valuable overview of the present status of this rapidly expanding interdisciplinary area of research. Lactic acid (IUPAC systematic name: 2-hydroxypropanoic acid), also known as milk acid, is a chemical compound that plays a role in several biochemical processes. It was first isolated in 1780 by a Swedish chemist, Carl Wilhelm Scheele, and is a carboxylic acid with a chemical formula of oH6O3. It has a hydroxyl group adjacent to the carboxyl group, making it an alpha hydroxy acid (AHA). In solution, it can lose a proton from the acidic group, producing the lactate ion CH3CH(OH)COO. It is miscible with water or ethanol, and is hygroscopic. Lactic acid is chiral and has two optical isomers. One is known as L-(+)-lactic acid or (S)-lactic acid and the other, its mirror image, is D-()-lactic acid or (R)-lactic acid. L-(+)-Lactic acid is the biologically important isomer.

    I bought this product to use as an acid peel for my face, hands and décolleté area however; this is not the seller's purpose for this product. I have found that it works great with some draw backs. First con, it does not come with any instructions; since this is not the intended purpose of the product you either need to know what you are doing or need to find instructions on the internet or from your doctor. The second drawback is that this product is quite a bit thinner than an acid peel intended for the skin, so the user needs to be careful to avoid applying too much and having the acid run to non-intended areas. Now for my experience: I've had several peels both from a doctor and a spa before attempting to do one myself at home so I knew what to expect, otherwise I may have been a little concerned. I am pleased with this one but it is quite strong, so be prepared to rinse with your baking soda water. Over the years I have used a peel of different types and strengths. I always use a cotton ball to apply the acid to my clean dry skin and immediately put baking soda in the sink and add water so I can be ready to splash water on my face to nutrilize the acid. I also wet a cloth with the baking soda water to dab my face for a few minutes after. I've never been able to leave it on for more than minutes. Remember I have been using peels for years. So start out with something milder. For me at this level it helps keep the age spots away and my lines are few.
