Lactic Acid Bacteria, Microbiological and Functional Aspects

Creator: Seppo Salminen, Atte Von Wright, Arthur Ouwehand | 2004-07-23

The first edition of this international bestseller both predicted and encouraged vigorous study of various strains of lactic acid bacteria in order to substantiate much of what was known but never scientifically validated.

Publisher: CRC Press

About this book
While lactic acid producing fermentation has been utilized to improve the storability, palatability, and nutritive value of perishable foods for a very long time, only recently have we begun to understand just why it works. The first edition of this international bestseller both predicted and encouraged vigorous study of various strains of lactic acid bacteria in order to substantiate much of what was known but never scientifically validated. The editors now feel compelled to offer a new edition in order to inform microbiologists, food technologists, nutritionists, clinicians, product development experts, and regulatory experts of what continues to be rapid progress in the field. Lactic Acid Bacteria: Microbiological and Functional Aspects, Third edition brings its readers up to date on this continually expanding branch of study incorporating the latest research and findings from all corners of the world. In keeping with the inclusive multidisciplinary philosophy of the original editions, the editors have recruited several more scientists of distinction -- bringing the total of contributors to 37. The bulk of the text has been completely rewritten with new chapters being added to cover recently evolved topics, such as mathematical modeling, vegetable fermentation, methods for analysis of the gut microbiota, and probiotics for fish. As in the two previous editions, the present volume gives a valuable overview of the present status of this rapidly expanding interdisciplinary area of research. Also, as before, special emphasis has been placed on the health aspects of lactic acid bacteria, although, as can be seen in the table of contents, other relevant applications are covered as well.

Lactic acid is chiral and has two optical isomers. One is known as L-(+)-lactic acid or (S)-lactic acid and the other, its mirror image, is D-()-lactic acid or (R)-lactic acid. L-(+)-Lactic acid is the biologically important isomer.

About this book
Lactic acid (IUPAC systematic name: 2-hydroxypropanoic acid), also known as milk acid, is a chemical compound that plays a role in several biochemical processes. It was first isolated in 1780 by a Swedish chemist, Carl Wilhelm Scheele, and is a carboxylic acid with a chemical formula of oH6O3. It has a hydroxyl group adjacent to the carboxyl group, making it an alpha hydroxy acid (AHA). In solution, it can lose a proton from the acidic group, producing the lactate ion CH3CH(OH)COO. It is miscible with water or ethanol, and is hygroscopic. Lactic acid is chiral and has two optical isomers. One is known as L-(+)-lactic acid or (S)-lactic acid and the other, its mirror image, is D-()-lactic acid or (R)-lactic acid. L-(+)-Lactic acid is the biologically important isomer.

Publisher: Springer

About this book
In ancient times foods fermented with lactic acid bacteria already constituted an important part of the human diet. From then on, lactic acid bacteria have played an essential role in the preservation of food raw materials and have contributed to the nutritional, organoleptic and health properties of human food products and animal feed. The important function that lactic acid bacteria still have in the production of foods all over the world has resulted in a growing scientific interest in these micro-organisms by academic research groups as well as by industry. During the last 15 years, this research has been stimulated by major internationally coordinated funding efforts that have resulted in a variety of important scientific breakthroughs and have led to new applications. Written by international experts in the field, this issue of Antonie van Leeuwenhoek documents these developments with respect to genetics, metabolism and the application of lactic acid bacteria for industrial and potential medical applications. In this book the first complete genome of a lactic acid bacterium is presented. The book will serve as a reference source and also as an indispensable source of information for further development and exploration of the field.

0 5/5 Keith88 - See all my reviews Verified Purchase(What's this?) This review is from: Intense Repair 88% Lactic Acid Peel with Free Fan Brush - Unbuffered Professional Grade - Revive Sun Damaged Skin Quickly (Misc.) I've tried numerous peels (jessners, tca10-30%) glycolic 40, and other brands of lactic in 30%. I've seen results with all of them but none that have targeted my post inflammatory hyper-pigmentation like this one! I applied it and waited the entire 10mins( not recommended for first time users). The next morning after showering, I noticed a thick layer of skin had peeled on my cheeks and t-zone. Slight peeling around neck area. I mean it shed like snake skin. I like the fact that the solution had a thicker consistency than most peels. Really helped with ingrown hair bumps... Will continue to buy only this product. 0 Help other customers find the most helpful reviews  Was this review helpful to you? , May 21, 2013

    wow!

0 5/5 not.plain.jane - See all my reviews Verified Purchase(What's this?) This review is from: Intense Repair 88% Lactic Acid Peel with Free Fan Brush - Unbuffered Professional Grade - Revive Sun Damaged Skin Quickly (Misc.) I love love this bottle of acid! It so powerful and effective. It has made my pores smaller my skin smoother and brighter all in just one application. As for the vendor, I was really impressed with their quick delivery and their thoughtfulness for including a free application brush. I will definitely order again. But, I need to stress that this is really powerful not for the beginner. I have been using lactic acid for about 5 years on and off, So I have very high tolerance, but I was only able to leave this on my face for 2 minutes. 0 Help other customers find the most helpful reviews  Was this review helpful to you? , August 13, 2012

This review is from: Intense Repair 88% Lactic Acid Peel with Free Fan Brush - Unbuffered Professional Grade - Revive Sun Damaged Skin Quickly (Misc.) I have excema, so after burning the crap out of my face with just normal lotion and regular products I decide to buy an acid, right?Well it makes sense now, maybe it balanced the PH of my skin or something, but my face is fine while using this product, and inflammation is reduced, which is the main cause of my breakouts and excema! 0 Help other customers find the most helpful reviews  Was this review helpful to you? , December 18, 2012
