Lactic Acid Bacteria, Microbiological and Functional Aspects

Creator: Seppo Salminen, Atte Von Wright, Arthur Ouwehand | 2004-07-23

The first edition of this international bestseller both predicted and encouraged vigorous study of various strains of lactic acid bacteria in order to substantiate much of what was known but never scientifically validated.

Publisher: CRC Press

About this book
While lactic acid producing fermentation has been utilized to improve the storability, palatability, and nutritive value of perishable foods for a very long time, only recently have we begun to understand just why it works. The first edition of this international bestseller both predicted and encouraged vigorous study of various strains of lactic acid bacteria in order to substantiate much of what was known but never scientifically validated. The editors now feel compelled to offer a new edition in order to inform microbiologists, food technologists, nutritionists, clinicians, product development experts, and regulatory experts of what continues to be rapid progress in the field. Lactic Acid Bacteria: Microbiological and Functional Aspects, Third edition brings its readers up to date on this continually expanding branch of study incorporating the latest research and findings from all corners of the world. In keeping with the inclusive multidisciplinary philosophy of the original editions, the editors have recruited several more scientists of distinction -- bringing the total of contributors to 37. The bulk of the text has been completely rewritten with new chapters being added to cover recently evolved topics, such as mathematical modeling, vegetable fermentation, methods for analysis of the gut microbiota, and probiotics for fish. As in the two previous editions, the present volume gives a valuable overview of the present status of this rapidly expanding interdisciplinary area of research. Also, as before, special emphasis has been placed on the health aspects of lactic acid bacteria, although, as can be seen in the table of contents, other relevant applications are covered as well.

Lactic Acid

Creator: Frederic P Miller, Agnes F Vandome, John McBrewster | 2009-12-23

Lactic acid is chiral and has two optical isomers. One is known as L-(+)-lactic acid or (S)-lactic acid and the other, its mirror image, is D-()-lactic acid or (R)-lactic acid. L-(+)-Lactic acid is the biologically important isomer.

About this book
Lactic acid (IUPAC systematic name: 2-hydroxypropanoic acid), also known as milk acid, is a chemical compound that plays a role in several biochemical processes. It was first isolated in 1780 by a Swedish chemist, Carl Wilhelm Scheele, and is a carboxylic acid with a chemical formula of oH6O3. It has a hydroxyl group adjacent to the carboxyl group, making it an alpha hydroxy acid (AHA). In solution, it can lose a proton from the acidic group, producing the lactate ion CH3CH(OH)COO. It is miscible with water or ethanol, and is hygroscopic.

In ancient times foods fermented with lactic acid bacteria already constituted an important part of the human diet. From then on, lactic acid bacteria have played an essential role in the preservation of food raw materials and have contributed to the nutritional, organoleptic and health properties of human food products and animal feed. The important function that lactic acid bacteria still have in the production of foods all over the world has resulted in a growing scientific interest in these micro-organisms by academic research groups as well as by industry. During the last 15 years, this research has been stimulated by major internationally coordinated funding efforts that have resulted in a variety of important scientific breakthroughs and have led to new applications. Written by international experts in the field, this issue of Antonie van Leeuwenhoek documents these developments with respect to genetics, metabolism and the application of lactic acid bacteria for industrial and potential medical applications. In this book the first complete genome of a lactic acid bacterium is presented. The book will serve as a reference source and also as an indispensable source of information for further development and exploration of the field.

    Great product, but use wisely

I have had chemical peels at spas and it doesn't come close to the results that this product does. It does leave my skin soft afterwards. I recommend using it once, nor more than twice a week as you want to allow new skin cells to generate. It is so simple to use, but it's very important to be careful on how you prep your skin and how long you leave it on. I don't have sensitive skin normally, but there have been some times where I have left the peel on too long, or have exfoliated too hard prior to application, and caused my face to have red blotches and eventually course skin a few days later due to tiny scabs from the burning of the skin. It scrubs off a few days after that, but if you do it right, you won't get those results. Out of the several times I have used this, this only happened a couple times and it was simply due to leaving it on too long or extensive exfoliation prior to application. I personally like to do this on a Friday night so that I don't apply any makeup the... 4/5 Tracy - See all my reviews Verified Purchase(What's this?) This review is from: Lactic Acid 50% Gel Peel - Enhanced with Kojic Acid & Bearberry Extract (Professional Chemical Peel) (Misc.) I normally don't give out reviews. As a Ph.D., I'm very skeptical about any claims made without scientific proof and data to support the claims. However, I decided to try this product based on the reviews I read on Amazon. After two applications, nothing short of amazing. My melasma spots are pretty much gone, and I've been living with them for years. Based on this, I felt compelled to give a review of this product. Pretty amazing product. Best way to describe it: a $1000 dermatologist visit in a $30 box. 0 Help other customers find the most helpful reviews  Was this review helpful to you? , May 26, 2013

Worked wonders on zits and scars!

I decided to come out of the shadows on my amazon account to write a review for this product - that's how amazing it is!I'm in my early 20s and started suffering from breakouts after barely ever having a zit in my teenage years, save for one once in a blue moon. Now, I have patches of pimples around my chin and on my cheeks. I had no idea what to do - I changed my skincare routine, started using natural soaps and toners and moisturizers, as well as a Clarisonic Mia face cleansing brush, with few results. I also began taking fish oil and vitamin supplements, but that did not work either. A few months ago I resigned myself to the idea that my skin just wouldn't be as clear as it used to be, and began resorting to foundation to cover up the breakouts. However, I randomly stumbled upon this product on Amazon one day. I was hesitant due to some of the mixed reviews, but after contemplating for a while and with my skin getting worse, I decided it would be worth a... 5/5 Mia Aurora - See all my reviews Verified Purchase(What's this?) Lactic Acid Peel

I was nervous about doing a chemical peel on my face without a specialist around so I bought one of the gentler formulas to use on my face. I was hoping just to exfoliate some of the dullness from my skin with this, but was surprised at just how much of a difference it made to my facial skin.My boyfriend who never noticed when I had 6" of hair cut off and my hair dyed from dark brown to red noticed actually asked me what I was doing to my skin the day after I first used this. He said I looked less tired and happier. So I was more than happy with the results. It not only made the skin look softer any other products I put on for a couple of days after using this seem to be absorbed better so it makes my moisturisers etc seem to work better too. My skin does go a little pink for a few hours after use so I would recommend it as best to use before bed time and to make sure you follow the directions carefully as I could see how it could burn your skin if left on... 5/5 wwax (Adelaide) - See all my reviews Verified Purchase(What's this?) If you are new to peels, this is a great one to start with.

This peel is a great way to start if you are new to peels because its hard to go wrong with it and it will allow you to practice your technique before you get into peels that have a higher potential for damage. My initial experience with peels were at a salon and ( 20% glycolic). I read that Lactic acid was milder than glycolic so decided to go with the 50% Lactic to start with. I don't know the specifics of how this works but your face has to build up a tolerance level to the peels so thats why they recommend you start low and build up. We all want immediate results and some people have resistant skin that can get away with plunging in to the deeper peels right away but, personally, I don't want to find out that I am not one of them after the fact. Its my face, I can't hide it, so I'd rather be safe... 5/5 honestly (Houston, Tx) - See all my reviews Verified Purchase(What's this?) I've tried numerous peels (jessners, tca10-30%) glycolic 40, and other brands of lactic in 30%. I've seen results with all of them but none that have targeted my post inflammatory hyper-pigmentation like this one! I applied it and waited the entire 10mins( not recommended for first time users). The next morning after showering, I noticed a thick layer of skin had peeled on my cheeks and t-zone. Slight peeling around neck area. I mean it shed like snake skin. I like the fact that the solution had a thicker consistency than most peels. Really helped with ingrown hair bumps... Noticable results!

I am in the process of trying to address some serious skin issues. Acne, scarred pores, ice pick scars, congested skin, etc. I have tried 20% salicylic acid peels before, but had no visible results, so I decided to try a 40% lactic acid peel since I felt I needed something a little stronger. I left the peel on for a total of 4 min for my first time. I did get burned fairly well between the folds of my nose and mouth and ended up with some scabbing, but nothing too major. I think I'm sensitive in those areas. I used a brush to apply it to my face and next time I will use a cotton pad around that area since it is more sensitive and use the brush for the rest of my face. (The brush holds more product than a cotton pad.) I am currently 3 days post peel and I am still dry and flaking. I can cover most of it up with tinted moisturizer (with SPF!) I can already notice a difference in depth on two scars and my skin tone seems more even. I'm excited for the flaking to stop so I can continue... 5/5 Kendra Given (Somewhere) - See all my reviews This review is from: Lactic Acid 40%- Lactic Acid | Asdm Beverly Hills (Misc.) I can use this twice a week with proper preparation and post-peel care. Please note that I am a veteran peeler, so I don't suggest doing that for first-timers or those new to peels. Also, you can burn yourself putting this on thick (like with a brush). Be prepared with a neutralizing solution (baking soda & water works just fine). Also, ASDM has this post-peel "T" cream that can really help your skin recover quickly. They gave me a sample, which was a great gesture (thank you!).Great products from ASDM, fast shipping, and all for a great price. I definitely recommend! 0 Help other customers find the most helpful reviews  Was this review helpful to you? , July 26, 2014

BACK STORY: I gave myself an "accidental" face peel as a teenager when I used my moms Retin-A and then went in the sun...I peeled for weeks after that! But since I'm in my early 30s and am now noticing fine lines and wrinkles as well as some sun spots (I love in S. Florida and the sun has done a number on me) I needed to try something, wrinkle creams just don't cut it. Also, I am fair with freckles and want to try to lighten them a bit as well. So, I got the nerve to try this peel and it was a piece of cake! I used a cotton ball and applied a small amount in an even layer all over. I was careful not to get too close to my eyes and lips. The first thing I noticed was how my little patches of acne started to get really red and I my skin was tingly. The directions tell you that if it's your first time using not to leave it on longer than a couple minutes. So when the time was up, I rinsed using plain water and on... 5/5 vandagal - See all my reviews Verified Purchase(What's this?) I used tca for my face 1 year a go it was strong and very intense but, this lactic acid 85% love it! Way to go. After my peel looks like I just went to a spa. Also I didn't really see my face was peeling, but definitely helps my acne away. 0 Help other customers find the most helpful reviews  Was this review helpful to you? , October 25, 2011
    · Lactic Acid is a thorough exfoliator, removing the outer layers of thickened or damaged skin, leaving a smoother and healthier appearance.
    · Lactic Acid is a naturally occurring human metabolite, there is less potential for allergic reaction with this type of acid peel.
    · Lactic is one of the Alpha Hydroxy acids (fruit acids). Fruit acids are nontoxic, naturally occurring substances, and are found in a variety of fruits, such as grapes, apples and sugar cane.

    Truly A Miracle Worker!

0 5/5 Stacy G. (Maryland, USA) - See all my reviews Verified Purchase(What's this?) This review is from: Philosophy Miracle Worker Lactic Acid Cleanser-8 oz. (Misc.) I have been a true Philosophy Girl for over 12 years now & up until recently I used Purity at night to remove makeup and Microdelivery Exfoliating Wash in the mornings. I picked up a sample of this at my local mall (I was very interested it was both a lactic acid cleanser & a mask!) I gave it a try once & I was sold! I have combination skin, oily on parts & dry on others. This balanced my skin perfectly! I use it at night after removing my makeup with a little Purity or a facial cleansing wipe, leave it on for 5 minutes three times a week, the other days I just use with my Clarisonic & rinse. My skin looks & feels so soft and my pores haven't been so small in ages. Sometimes I use it in the morning too depending on my skin's needs. I highly recommend this cleanser, the entire Miracle Worker line is amazing, but this cleanser is definitely a true Miracle Worker!!! 0 Help other customers find the most helpful reviews  Was this review helpful to you? , May 22, 2013

    Small but noticeable difference

0 5/5 Snowapple - See all my reviews Verified Purchase(What's this?) This review is from: Philosophy Miracle Worker Lactic Acid Cleanser-8 oz. (Misc.) I have always gotten excellent results with products from Philosophy and this product meets the same standards. I have sensitive skin and I didn't have any problems with this cleanser. I have noticed that my skin does look clearer and my pores seemed smaller. I thought that this was a good price for a good product and that it was definitely worth giving a try. 0 Help other customers find the most helpful reviews  Was this review helpful to you? , April 29, 2013
