Lactic Acid Bacteria, Microbiological and Functional Aspects

Creator: Seppo Salminen, Atte Von Wright, Arthur Ouwehand | 2004-07-23

The first edition of this international bestseller both predicted and encouraged vigorous study of various strains of lactic acid bacteria in order to substantiate much of what was known but never scientifically validated.

Publisher: CRC Press

About this book
While lactic acid producing fermentation has been utilized to improve the storability, palatability, and nutritive value of perishable foods for a very long time, only recently have we begun to understand just why it works. The first edition of this international bestseller both predicted and encouraged vigorous study of various strains of lactic acid bacteria in order to substantiate much of what was known but never scientifically validated. The editors now feel compelled to offer a new edition in order to inform microbiologists, food technologists, nutritionists, clinicians, product development experts, and regulatory experts of what continues to be rapid progress in the field. Lactic Acid Bacteria: Microbiological and Functional Aspects, Third edition brings its readers up to date on this continually expanding branch of study incorporating the latest research and findings from all corners of the world. In keeping with the inclusive multidisciplinary philosophy of the original editions, the editors have recruited several more scientists of distinction -- bringing the total of contributors to 37. The bulk of the text has been completely rewritten with new chapters being added to cover recently evolved topics, such as mathematical modeling, vegetable fermentation, methods for analysis of the gut microbiota, and probiotics for fish. As in the two previous editions, the present volume gives a valuable overview of the present status of this rapidly expanding interdisciplinary area of research. Also, as before, special emphasis has been placed on the health aspects of lactic acid bacteria, although, as can be seen in the table of contents, other relevant applications are covered as well.

About this book
Lactic acid (IUPAC systematic name: 2-hydroxypropanoic acid), also known as milk acid, is a chemical compound that plays a role in several biochemical processes. It was first isolated in 1780 by a Swedish chemist, Carl Wilhelm Scheele, and is a carboxylic acid with a chemical formula of oH6O3. It has a hydroxyl group adjacent to the carboxyl group, making it an alpha hydroxy acid (AHA). In solution, it can lose a proton from the acidic group, producing the lactate ion CH3CH(OH)COO. It is miscible with water or ethanol, and is hygroscopic. Lactic acid is chiral and has two optical isomers. One is known as L-(+)-lactic acid or (S)-lactic acid and the other, its mirror image, is D-()-lactic acid or (R)-lactic acid. L-(+)-Lactic acid is the biologically important isomer.

Publisher: Springer

About this book
In ancient times foods fermented with lactic acid bacteria already constituted an important part of the human diet. From then on, lactic acid bacteria have played an essential role in the preservation of food raw materials and have contributed to the nutritional, organoleptic and health properties of human food products and animal feed. The important function that lactic acid bacteria still have in the production of foods all over the world has resulted in a growing scientific interest in these micro-organisms by academic research groups as well as by industry. During the last 15 years, this research has been stimulated by major internationally coordinated funding efforts that have resulted in a variety of important scientific breakthroughs and have led to new applications. Written by international experts in the field, this issue of Antonie van Leeuwenhoek documents these developments with respect to genetics, metabolism and the application of lactic acid bacteria for industrial and potential medical applications. In this book the first complete genome of a lactic acid bacterium is presented. The book will serve as a reference source and also as an indispensable source of information for further development and exploration of the field.

    Great Size for the Price

I bought this product to use as an acid peel for my face, hands and décolleté area however; this is not the seller's purpose for this product. I have found that it works great with some draw backs. First con, it does not come with any instructions; since this is not the intended purpose of the product you either need to know what you are doing or need to find instructions on the internet or from your doctor. The second drawback is that this product is quite a bit thinner than an acid peel intended for the skin, so the user needs to be careful to avoid applying too much and having the acid run to non-intended areas. Now for my experience: I've had several peels both from a doctor and a spa before attempting to do one myself at home so I knew what to expect, otherwise I may have been a little concerned. I wasn't sure what strength to start with so I first bought a 50% lactic acid and began with a low application time and gradually increased the time with each application... 5/5 Wendy Marr - See all my reviews Verified Purchase(What's this?) This review is from: Intense Repair 88% Lactic Acid Peel with Free Fan Brush - Unbuffered Professional Grade - Revive Sun Damaged Skin Quickly (Misc.) I've tried numerous peels (jessners, tca10-30%) glycolic 40, and other brands of lactic in 30%. I've seen results with all of them but none that have targeted my post inflammatory hyper-pigmentation like this one! I applied it and waited the entire 10mins( not recommended for first time users). The next morning after showering, I noticed a thick layer of skin had peeled on my cheeks and t-zone. Slight peeling around neck area. I mean it shed like snake skin. I like the fact that the solution had a thicker consistency than most peels. Really helped with ingrown hair bumps... It so powerful and effective. It has made my pores smaller my skin smoother and brighter all in just one application. As for the vendor, I was really impressed with their quick delivery and their thoughtfulness for including a free application brush. I will definitely order again. But, I need to stress that this is really powerful not for the beginner. I have been using lactic acid for about 5 years on and off, So I have very high tolerance, but I was only able to leave this on my face for 2 minutes. 0 Help other customers find the most helpful reviews  Was this review helpful to you? , August 13, 2012

    Excellent Level 1 Peel

This is a review for the 35% Lactic Acid peel. I have sensitive skin that is dry, but also acne prone. I have some hyperpigmentation from past blemishes and hormonal birth control and the beginning of fine lines around my mouth.I have used this product twice, once a week for the past two weeks. I follow the acne.org method, but the night before and the day of the peel I give it a break so my skin doesn't get too dry. Before I apply the peel I cleanse with Cetaphil and wait about a half hour until my skin is bone dry. The peel is in gel form, and application is easy with either a synthetic brush or cotton pad. I have experienced little discomfort while it was on my face, and then only at the sides of my nose. I left it on for 2 minutes the first time, and five minutes the second time. I experienced absolutely no frosting of any kind. I neutralize with a baking soda paste after rinsing with copious amounts of water, and follow with a thick layer of Vanicream, and... 5/5 A. I'm a mission to clear up adult acne and improve my complexion and reduce some fine lines. I have now spent over 40 hours on various websites (incl Amazon) researching peels and zit treatments until my eyeball are ready to pop. Being that I'm going the "at home" route now AND have skin issues, I opted for this light 35% version first. After emailing the company, I heard back the same day with an apology & a promise that they would send the correct order to me via priority mail. I had my doubts but low & behold it arrived very shortly with another apology & a free container of moisturizer! Wow..that doesn't happen nowadays! Meanwhile, I got to keep the lactic acid so decided to use it. This was my first time so I was very cautious. I put two layers on some stubborn sunspots which looked semi burnt for a day or two but they peeled & are looking fine. It really did lessen the discoloration of the age spots & I will use it again. Very happy with the product & the company. Would recommend!!:) 0 Help other customers find the most helpful reviews  Was this review helpful to you? , October 10, 2011

My skin type is light & sensitive . I'm Irish French & German with light eyes & dark hair, which means I have some sun damage spots and uneven spots without make-up, which I HATE wearing .. Which is why I like the idea of peels so much.I had previously used the 70/30 peel which I graduated leaving on for 7-8 mins & had ok results. One peel with this strength peel & the results were really good! It evened out my skin discolorations & sun spots . I only let it on for 5 mins & it did redden & burn my skin a little. Next time I think 3 mins should be sufficient 0 Help other customers find the most helpful reviews  Was this review helpful to you? , November 21, 2012

First, I want to say I've always received exceptional customer service from Skin Obsession. Products arrive fast and packaged well. Rare mistakes are always corrected as repeat business seems to be very important to the sellers. I buy three products regularly. One of them is the 85 percent Lactic Acid peel. The Lactic acid is not a peel in which one will see a lot of peeling. In fact, if used right, you should not experience what we call down time. You really shouldn't see much more than some flaking, if even that. It will depend, of course, on how much exfoliation your already do. No overt peeling or flaking doesn't mean it is not working. The Lactic acid peel is primary for 1) keeping skin tone even -- getting rid of discoloration from anything, acne, sun damage and 2) to keep your skin decongested, which lets it absorb other products much better.
