Lactic Acid Bacteria, Microbiological and Functional Aspects

Creator: Seppo Salminen, Atte Von Wright, Arthur Ouwehand | 2004-07-23

The first edition of this international bestseller both predicted and encouraged vigorous study of various strains of lactic acid bacteria in order to substantiate much of what was known but never scientifically validated.

Publisher: CRC Press

About this book
While lactic acid producing fermentation has been utilized to improve the storability, palatability, and nutritive value of perishable foods for a very long time, only recently have we begun to understand just why it works. The first edition of this international bestseller both predicted and encouraged vigorous study of various strains of lactic acid bacteria in order to substantiate much of what was known but never scientifically validated. The editors now feel compelled to offer a new edition in order to inform microbiologists, food technologists, nutritionists, clinicians, product development experts, and regulatory experts of what continues to be rapid progress in the field. Lactic Acid Bacteria: Microbiological and Functional Aspects, Third edition brings its readers up to date on this continually expanding branch of study incorporating the latest research and findings from all corners of the world. In keeping with the inclusive multidisciplinary philosophy of the original editions, the editors have recruited several more scientists of distinction -- bringing the total of contributors to 37. The bulk of the text has been completely rewritten with new chapters being added to cover recently evolved topics, such as mathematical modeling, vegetable fermentation, methods for analysis of the gut microbiota, and probiotics for fish. As in the two previous editions, the present volume gives a valuable overview of the present status of this rapidly expanding interdisciplinary area of research. Also, as before, special emphasis has been placed on the health aspects of lactic acid bacteria, although, as can be seen in the table of contents, other relevant applications are covered as well.

About this book
Lactic acid (IUPAC systematic name: 2-hydroxypropanoic acid), also known as milk acid, is a chemical compound that plays a role in several biochemical processes. It was first isolated in 1780 by a Swedish chemist, Carl Wilhelm Scheele, and is a carboxylic acid with a chemical formula of oH6O3. It has a hydroxyl group adjacent to the carboxyl group, making it an alpha hydroxy acid (AHA). In solution, it can lose a proton from the acidic group, producing the lactate ion CH3CH(OH)COO. It is miscible with water or ethanol, and is hygroscopic. Lactic acid is chiral and has two optical isomers. One is known as L-(+)-lactic acid or (S)-lactic acid and the other, its mirror image, is D-()-lactic acid or (R)-lactic acid. L-(+)-Lactic acid is the biologically important isomer.

About this book
In ancient times foods fermented with lactic acid bacteria already constituted an important part of the human diet. From then on, lactic acid bacteria have played an essential role in the preservation of food raw materials and have contributed to the nutritional, organoleptic and health properties of human food products and animal feed. The important function that lactic acid bacteria still have in the production of foods all over the world has resulted in a growing scientific interest in these micro-organisms by academic research groups as well as by industry. During the last 15 years, this research has been stimulated by major internationally coordinated funding efforts that have resulted in a variety of important scientific breakthroughs and have led to new applications. Written by international experts in the field, this issue of Antonie van Leeuwenhoek documents these developments with respect to genetics, metabolism and the application of lactic acid bacteria for industrial and potential medical applications. In this book the first complete genome of a lactic acid bacterium is presented. The book will serve as a reference source and also as an indispensable source of information for further development and exploration of the field.

This review is from: Intense Repair 88% Lactic Acid Peel with Free Fan Brush - Unbuffered Professional Grade - Revive Sun Damaged Skin Quickly (Misc.) I've tried numerous peels (jessners, tca10-30%) glycolic 40, and other brands of lactic in 30%. I've seen results with all of them but none that have targeted my post inflammatory hyper-pigmentation like this one! I applied it and waited the entire 10mins( not recommended for first time users). The next morning after showering, I noticed a thick layer of skin had peeled on my cheeks and t-zone. Slight peeling around neck area. I mean it shed like snake skin. I like the fact that the solution had a thicker consistency than most peels. Really helped with ingrown hair bumps... This review is from: Intense Repair 88% Lactic Acid Peel with Free Fan Brush - Unbuffered Professional Grade - Revive Sun Damaged Skin Quickly (Misc.) First let me start by saying this product is very good.. It dimishes fine lines, brightens face, and leaves the face soft and dewy. However do not leave this product on for longer than 10mins if your face is not use to high grade peels. Because it will burn your skin. Also rinse well and please neutralize after use. I use this product 6wks on every week than 6wks off. I use less in the summer only before events with a good sunscreen which I wear daily. Excellent product if directions are followed and proper caution taken. 0 Help other customers find the most helpful reviews  Was this review helpful to you? , June 2, 2013

    Miracle!

It was a fluke that I bought this. They didn't have my go-to lotion at the drug store, and there were a bunch of tourists that wouldn't move out of the lotion aisle, so I grabbed the first unscented thing I saw. Holy guacamole am I glad I did. This stuff has saved my skin and given me back my quality of life. Seriously. I can't stress this enough. And I've only been using it for four days. My face was a mess. For years. After a small eczema breakout in my mid-twenties, a dermatologist had me slather my face with a powerful corticosteroid. And then another. And another. Ten years went by and even years after I refused to put more poison on my face, I hadn't recovered. The skin on my face was dry to point of cracking, and after we moved to an incredibly humid place, it was red, itchy, and peeling ALL THE TIME. People wouldn't touch me because they thought I was contagious. Strangers wouldn't look at me because I made them uncomfortable. It sucked, people. And doctors never seemed to... 5/5 J.L.M. Lactic Acid Peel

I was nervous about doing a chemical peel on my face without a specialist around so I bought one of the gentler formulas to use on my face. I was hoping just to exfoliate some of the dullness from my skin with this, but was surprised at just how much of a difference it made to my facial skin.My boyfriend who never noticed when I had 6" of hair cut off and my hair dyed from dark brown to red noticed actually asked me what I was doing to my skin the day after I first used this. He said I looked less tired and happier. So I was more than happy with the results. It not only made the skin look softer any other products I put on for a couple of days after using this seem to be absorbed better so it makes my moisturisers etc seem to work better too. My skin does go a little pink for a few hours after use so I would recommend it as best to use before bed time and to make sure you follow the directions carefully as I could see how it could burn your skin if left on... 5/5 wwax (Adelaide) - See all my reviews Verified Purchase(What's this?) If you are new to peels, this is a great one to start with.

This peel is a great way to start if you are new to peels because its hard to go wrong with it and it will allow you to practice your technique before you get into peels that have a higher potential for damage. My initial experience with peels were at a salon and ( 20% glycolic). I read that Lactic acid was milder than glycolic so decided to go with the 50% Lactic to start with. I don't know the specifics of how this works but your face has to build up a tolerance level to the peels so thats why they recommend you start low and build up. We all want immediate results and some people have resistant skin that can get away with plunging in to the deeper peels right away but, personally, I don't want to find out that I am not one of them after the fact. Its my face, I can't hide it, so I'd rather be safe... 5/5 honestly (Houston, Tx) - See all my reviews Verified Purchase(What's this?) However, when I used it before bedtime, after washing off my makeup, it burned like crazy, but I did not experience much if any redness. Not just for use on face - great for Keratosis Pilaris

Thanks to [re]fresh I received a complimentary sample of their 10% Lactic Acid peel for review. It wasn't a moment too soon either! I had been researching what we could do about keratosis pilaris (chicken skin, yuck). Keratosis pilaris is a build up of dead skin cells around the hair follicles usually on the backs of the arms and thighs. It was frustrating to learn that this condition is hereditary :(. My girls both have this on the backs of their arms in varying degrees throughout the year. Their skin is very delicate so I try not to scrub their little arms too hard for fear of worsening the condition or causing some other irritation. Looking through books and the internet I learned that glycolic acid, lactic acid or salicylic acid are suggested topical chemical treatments for KP. From experience I knew that salicylic acid is stronger and very astringent, so I didn't really want to use something like that for my little ones. I learned that lactic acid is more gentle so when... I am impressed!!

If you are like me I look at the Lactic Acid Face Peel, and really do not want to put that on my face. Well because of that I have put this review off for as long as I could. I committed and I will do it. Ok now the pep talk is over!I wanted to learn something about the lactic acid peel, so I found this on buzzle.com HERE:Lactic acid is an alpha hydroxy acid that is mild and hence suitable for sensitive skin. Lactic acid peels serve many purposes which include regulating the pH of the skin, removing impurities from the skin, cleansing the pores, removing dead cells, etc. If you have heard of glycolic acid peels, then you must know that it is similar to a lactic acid peel as both are alpha hydroxy acids. The only difference is that glycolic acid is stronger as compared to lactic acid, and hence cannot be used by people who have very sensitive skin.Read more at Buzzle: http://www.buzzle.com/articles/benefits-of-lactic-acid-peel.htmlBenefits... 5/5 lauras930 - See all my reviews Verified Purchase(What's this?) This changed my life!!!!!!!

0 5/5 Zunilda - See all my reviews Verified Purchase(What's this?) This review is from: Dr Song 50% Lactic Acid Gel Peel (Professional) (Misc.) This product has changed my life!!!!!! When I was younger I used to be builled all my life because I suffer from pcos and I had extremely bad dark acne scars | pigmentation underneath my chin. I went to doctors and they charged thousands and I was like oh heck no! So I had to death with my ugly skin for years. My confident level was none. Years later my husband who always supportive told me that he saw on dr oz that lactic peels helps eliminate scars and lighten skin. So I checked here on Amazon , I saw this, purchased it because it was affordable. I used it 4x a week And within 2 months *this bottle last for 2 months * it elimated all my dark spots! scars and lightened my chin! I also after i finished applying this, i put coconut oil under my chin because coconut oil helps restore skin. I feel like crying I still can't believe it! I am so confident I no longer have to put concealer under my chin. I recommend this to everyone!!! 0 Help other customers find the most helpful reviews  Was this review helpful to you? , August 3, 2014
